Chicharrón in Ranchera Sauce

  • 7 tomatillos
  • 2 cloves garlic
  • 1/4 onions
  • 1 cup chicken broth
  • 10 árbol chiles, rehydrated, seedless
  • 2 guajillo chiles, rehydrated, seedless
  • 5 cascabel chiles, rehydrated, seedless
  • 2 tablespoons lard
  • 500 grams pork rinds, chopped
  • salt
  • pepper
  • white rice, for accompaniment
  • Charro beans, for accompaniment
  • corn tortillas, for accompaniment
  • Mundet® Plum Cider

  • Roast the green tomatoes, garlic, and onion on a griddle for 5 to 8 minutes, then remove from the griddle.
  • Blend the green tomatoes, garlic, onion, árbol chili, pasilla chili, and cascabel chili for 5 minutes
  • Melt the lard in a clay pot for 2 minutes, and when it is hot, add the blended sauce and let it boil for 5 minutes. Once it boils, add the chicharrón and cook for 20 minutes. Season the chicharrón in sauce with salt and pepper. Remove from heat.
  • Serve the chicharrón in ranchera sauce on a plate and accompany with beans, rice, and tortillas. Enjoy with Sidral Mundet® Plum!
