Chicharrón in Red Sauce

  • 1/4 kilos pork rinds, cut into pieces
  • 3 pieces serrano chile
  • 2 cloves garlic
  • 4 pieces red tomato, without skin
  • salt
  • black pepper
  • 1 cup water
  • 1/4 bunches fresh cilantro
  • 1 tablespoon vegetable oil
  • 1/4 pieces onion, large, sliced
  • 1/4 teaspoons cumin, ground

  • Blend the chiles, garlic, red tomato, salt, pepper, and water until well mixed. Add the cilantro and blend for a few more seconds.
  • Heat the oil in a saucepan and sauté the onion for about 5 minutes until it becomes translucent. Add the red tomato sauce and cumin. Cook over medium heat for 10 minutes. Season with salt and pepper.
  • Add the chicharrón, cover the saucepan, and continue cooking on low heat for 10 minutes until it becomes soft.
  • Serve.
