Melted Cheese with Chicharrón

  • 1 teaspoon garlic, finely chopped
  • 2 serrano chiles, finely chopped
  • 3 cups asadero cheese
  • 1/2 cups Oaxaca cheese, shredded
  • 1/4 cups milk
  • 2 tablespoons chile flakes
  • 2 tablespoons cilantro, finely chopped
  • 2 cups pork rinds, in bite-sized pieces
  • corn tortillas, for serving
  • red salsa, for serving

  • Heat the vegetable oil in a skillet over medium heat, add the garlic and serrano chili, and cook until they obtain a shiny and slightly dark tone; remember to stir occasionally.
  • Grate the asadero cheese and mix in the Oaxaca cheese, then mix very well, pour in the milk, and cover. Cook for 10 minutes.
  • Uncover the skillet and add the chili flakes, cilantro, and pork chicharrón. Mix to combine, cook for 4 more minutes, and remove the melted cheese with chicharrón from the heat.
  • Serve the melted cheese with chicharrón hot and enjoy with tortillas, red salsa, and pickled red onion to taste.
