Ingredients: vegetable oil, for brushing; 1 teaspoon garlic, finely chopped; 2 serrano chiles, finely chopped; 3 cups asadero cheese; 1/2 cups Oaxaca cheese, shredded; 1/4 cups milk; 2 tablespoons chile flakes; 2 tablespoons cilantro, finely chopped; 2 cups pork rinds, in bite-sized pieces; corn tortillas, for serving; red salsa, for serving

Heat the vegetable oil in a skillet over medium heat, add the garlic and serrano chili, and cook until they obtain a shiny and slightly dark tone; remember to stir occasionally. Grate the asadero cheese and mix in the Oaxaca cheese, then mix very well, pour in the milk, and cover. Cook for 10 minutes.
