Mini Pork Crackling Tortas

These mini tortas are a typical dish from the state of Guanajuato known as Guacamayas and are made with pork crackling and two red salsas based on tomato. They are very simple to prepare but have great flavor, making them an ideal Mexican dish to satisfy your family's cravings, with a winning combination of bolillo, pico de gallo, and chicharrón.

  • 1 1/2 cups tomato, finely chopped
  • 1 cup onion, finely chopped
  • 1/4 cups cuaresmeño chile, finely chopped
  • 1 cup fresh cilantro, finely chopped
  • 2 limes, juice, for the pico de gallo

  • 1/4 onions, whole
  • 1 clove garlic, whole
  • 2 árbol chiles, whole

  • 3 bolillo rolls, mini

  • For the pico de gallo, mix the chopped tomato, onion, cuaresmeño chili, cilantro, lime juice, and season with salt. Set aside.
  • For the roasted salsa, roast the whole tomato, onion, garlic, and árbol chili; cool for 5 minutes, blend, and season with salt. Set aside.
  • Using a serrated knife, cut the bolillo in half, fill with the chopped chicharrón, the roasted salsa, and the pico de gallo.
  • Serve on a platter accompanied by the salsa and pico de gallo. Enjoy.
