Chipotle Pork Hash

This chipotle pork hash is a very Mexican stew, slightly spicy and delicious, but above all, very easy and quick to prepare!

  • 4 tomatoes, cut into 4, for the sauce
  • 1/8 onions, for the sauce
  • 1 clove garlic, for the sauce
  • 1/4 cups chipotle chile in adobo sauce, for the sauce
  • 1/4 teaspoons cumin, for the sauce
  • 1/2 teaspoons oregano, for the sauce
  • 3 black peppercorns, for the sauce
  • 1 cup water, or vegetable broth for the sauce
  • salt, for the sauce
  • lard
  • 1 1/2 cups onion, finely chopped
  • 1 cup carrot, in very small cubes
  • 1 cup potato, in very small cubes
  • 1 cup ground pork
  • salt
  • pepper
  • fresh oregano, for garnish
  • tostadas, for serving

  • For the sauce: Blend the tomato, onion, garlic, chipotle pepper, cumin, oregano, black pepper, water, and a little salt for 3 minutes. Set aside.
  • Heat a skillet over medium heat, add lard and fry the onion, carrot, and potato for 5 minutes. Then, add the ground pork, continue cooking, and season with salt. Finally, pour in the blended sauce and cook for another 10 minutes or until the sauce has reduced and thickened.
  • Serve the chipotle pork hash on a platter to share, sprinkle with parsley, and accompany with toast.
