For the sauce: Blend the tomato, onion, garlic, chipotle pepper, cumin, oregano, black pepper, water, and a little salt for 3 minutes. Set aside.
Heat a skillet over medium heat, add lard and fry the onion, carrot, and potato for 5 minutes. Then, add the ground pork, continue cooking, and season with salt. Finally, pour in the blended sauce and cook for another 10 minutes or until the sauce has reduced and thickened.
Serve the chipotle pork hash on a platter to share, sprinkle with parsley, and accompany with toast.
