For the sauce: Blend the tomato, onion, garlic, chipotle pepper, cumin, oregano, black pepper, water, and a little salt for 3 minutes. Set aside. Heat a skillet over medium heat, add lard and fry the onion, carrot, and potato for 5 minutes. Then, add the ground pork, continue cooking, and season with salt. Finally, pour in the blended sauce and cook for another 10 minutes or until the sauce has reduced and thickened.
