Chimichangas with Mexican Chipotle and Cilantro Hummus

These chimichangas with Mexican chipotle and cilantro hummus are totally different from what you have tried. Delicious chimichangas made with pita bread, filled with ground pork, chorizo, and bacon. Delicious!

  • 10 slices bacon, finely chopped
  • 1 chorizo, crumbled
  • 3 tablespoons onion, finely chopped
  • 1 cup ground beef
  • 2 güero chiles, sliced
  • 1 cup Oaxaca cheese, shredded
  • 1 package Libanius® pita bread, to accompany
  • 1 Libanius® chipotle and coriander hummus, to accompany
  • salt and pepper

  • In a skillet over medium heat, fry the bacon with the chorizo. Remove the excess fat and add the onion and ground meat, cook for 5 minutes. Add the yellow chili, season with salt and pepper.
  • Add the Oaxaca cheese and cook for 3 minutes or until it melts.
  • Heat the Libanius® taco pita bread in the microwave for 10 seconds. Fill with the previous preparation and roll into a chimichanga.
  • Serve and accompany with the delicious Libanius® Chipotle and Cilantro Hummus
