Grill the chiles, onion, and tomato until they feel soft.
Remove the skin from the chorizo or longaniza and place it in a pot with the tablespoon of previously heated oil.
Remove the burnt skin from the chiles and tomatoes. Blend the chiles, tomatoes, onion, and garlic, trying not to blend them completely to maintain a molcajete-like appearance.
Once the meat is ready, pour in the blended sauce and cook until it changes color.
Finally, add water and adjust the seasoning.
