Chorizo in Red Sauce

Chorizo or longaniza in sauce made from roasted cuaresmeño chiles. Delicious and spicy. Perfect for eating in tacos or serving with tasty rice. It's a very rich dish that everyone will love.

  • 350 grams chorizo, longaniza 350 grams chorizo, longaniza
  • 4 cuaresmeño chiles
  • 500 grams tomato  500 grams tomato
  • 1/4 onions 1/4 onions
  • 1 clove garlic 1 clove garlic

  • Grill the chiles, onion, and tomato until they feel soft.
  • Remove the skin from the chorizo or longaniza and place it in a pot with the tablespoon of previously heated oil.
  • Remove the burnt skin from the chiles and tomatoes. Blend the chiles, tomatoes, onion, and garlic, trying not to blend them completely to maintain a molcajete-like appearance.
  • Once the meat is ready, pour in the blended sauce and cook until it changes color. Finally, add water and adjust the seasoning.
