Chorizo Patties in Tomato Sauce

  • 1/2 cups onion, finely chopped
  • 1 tablespoon garlic, finely chopped
  • 2 tablespoons epazote, finely chopped
  • 2 potatoes, boiled and in cubes
  • 3/4 cups Fud® panela cheese, crumbled
  • 1/4 cups cornstarch
  • 1 cup egg
  • salt and pepper

  • 2 cloves garlic, chopped, for the sauce
  • 8 tomatoes, quartered, for the sauce
  • 3 allspice berries, for the sauce
  • 1 cup chicken broth, for the sauce
  • 1/4 cups fresh cilantro, for the sauce

  • In a pan over medium heat, cook the FUD® pork chorizo until it releases some fat. Add the onion and garlic, cook for 3 more minutes, and add the epazote. Remove and cool.
  • In a bowl, mash the cooked potatoes very well and incorporate the chorizo mixture, FUD® panela cheese, corn starch, egg, salt, and pepper. Form patties using your hands.
  • Heat the oil in a pan over medium heat and cook the patties until golden brown on both sides. Drain on paper towels and keep warm.
  • For the sauce, in a pot heat one tablespoon of vegetable oil and cook the onion with the garlic, tomato, and allspice until the vegetables soften. Add the chicken broth, let it come to a boil, and cook for 10 minutes. Cool slightly.
  • Blend the previous preparation with cilantro and salt. Return to cook for 10 more minutes or until thickened.
  • Serve the patties with a mirror of sauce and garnish with FUD® panela cheese, avocado, and fresh cilantro.
