Chorizo with Beer

This sausage is very popular in Mexico, as we add it to sopes, quesadillas, huaraches, flautas, and more.   • 1 kilo chorizo
  • 1/2 onions, finely chopped
  • 1 clove garlic, finely chopped
  • 1 can lager beer
  • 1 teaspoon honey
  • 1 tablespoon mustard
  • parsley, finely chopped
  • baguette, for accompaniment

  • Cut the chorizo into slices about an inch thick. Cook in a skillet over medium heat for 3 minutes. Add the onion and garlic and cook for 2 more minutes.
  • Add the beer, honey, and mustard. Cook for 5 minutes or until the beer has reduced by half.
  • Serve the chorizo, sprinkle with parsley and accompany with slices of bread or flour tortillas.
