Chorizo Wrapped in Empanada Dough

Dare to try this chorizo wrapped in empanada dough, as it is also filled with cheese, making it very crispy! The best part is that the filling has all the flavor of the Embasa® Tomato Sauce for seasoning, giving an extra touch of flavor to your dishes!

  • 2 tablespoons butter
  • 1/2 cups onion, finely chopped
  • 1 cup green bell pepper, in small cubes
  • 1 cup red bell pepper, in small cubes
  • 1/4 cups cuaresmeño chile, in small cubes
  • 1/2 cups Embasa® tomato sauce for dressing
  • salt

  • 8 Argentinian chorizos, butterflied
  • 2 cups Manchego cheese, grated
  • 16 empanada dough
  • 1 egg, beaten, to brush the empanadas
  • chimichurri, to accompany

  • Melt the butter in a skillet over medium heat. Then, add the onion, green pepper, red pepper, and cuaresmeño chili; cook for 5 minutes. Pour in the Embasa® Tomato Sauce to season and cook for 2 minutes. Finally, season with salt and pepper. Set aside.
  • Open the chorizos butterfly-style and fill with the previously prepared filling using a spoon. Then, cover with a little cheese, place the chorizo on 2 empanada discs, and seal them with a bit of egg. Once sealed, brush the wrapped chorizos with egg.
  • Bake the chorizo wrapped in empanada dough at 180 °C for 45 minutes.
  • Remove the wrapped chorizo from the oven, serve hot, and accompany with chimichurri.
