Sauté the onion in a skillet with the butter, add the chorizo. Once mixed, remove from the skillet and set aside.
Lightly grease a baking dish, add the cheese and half of the chorizo. Cover the baking dish with aluminum foil and place it on low heat until the cheese starts to melt (approximately 3 minutes). Uncover and cook for another 2 minutes or until the cheese is completely melted. Put the remaining chorizo on top of the cheese.
Serve hot accompanied by flour tortillas so everyone can prepare their own tacos. It can also be served with a Mexican hot sauce.
