Potato and Chorizo Huaraches

This delicious Potato and Chorizo Huarache recipe is a traditional Mexican snack that is very easy to make.   • 1/2 kilos masa dough
  • 25 grams lard
  • 1/4 teaspoons salt
  • water
  • vegetable oil
  • 1/4 cups onion, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 serrano chile, finely chopped
  • 1 cup chorizo
  • 1 cup potato, cooked and in small cubes
  • salt
  • pepper
  • 1 tablespoon vegetable oil
  • 1 can La Costeña® refried pinto beans
  • lettuce, finely chopped, for serving
  • sour cream, for serving
  • panela cheese, for serving
  • avocado, for serving
  • La Costeña® green salsa, for serving

  • In a bowl, mix the corn dough with the lard, salt, water and knead until well integrated.
  • On a board, form a roll of dough with your hands and place it vertically in the tortilla press, press down and shape the huaraches.
  • On a griddle, cook the huaraches for 3 minutes on each side or until cooked.
  • In a pan with oil, fry the huaraches on both sides and drain on absorbent paper. Keep warm.
  • For the filling, in a pan, cook the onion, garlic, serrano chili, and chorizo for about 5 minutes or until the chorizo is cooked. Remove excess fat and add the potato, cook a few more minutes and season with salt and pepper.
  • In a pan with oil, heat the La Costeña® refried pinto beans and season with salt and pepper.
  • For assembly, spread the huaraches with a bit of La Costeña® refried pinto beans, add the potato with chorizo, a little lettuce, cream, cheese, and avocado.
  • Serve with La Costeña® green salsa and enjoy.
