Cochinita Pibil Burrito

For burrito lovers, this version of cochinita pibil, refried beans with bacon and avocado. Served with pickled red onions and the classic black habanero sauce. You will love it!

  • 1/2 cups white vinegar
  • 1/4 cups lime juice
  • 1 red onion, sliced
  • 1 teaspoon dried oregano
  • 3 Habanero chiles, sliced, deveined and seedless
  • 1/4 cups bacon, chopped
  • 1 cup refried beans
  • 1 tablespoon ground chipotle chile
  • salt and pepper
  • 1/4 teaspoons cumin
  • 1 tablespoon vegetable oil
  • 1 cup cochinita pibil
  • 3 tablespoons orange juice, sour
  • 4 Northgate flour tortillas
  • 1 avocado, in slices

  • For the pickled onions, in a bowl mix the vinegar with the lemon juice, onion, oregano, habanero chili, salt and pepper to taste. Marinate for about 1 hour or until the onions change color.
  • In a medium skillet, cook the bacon until golden, add the beans, chipotle, and cook for 5 minutes, season with salt, pepper, and cumin to taste. Set aside.
  • In a medium skillet, heat the cochinita pibil with a tablespoon of oil, add the orange juice and cook for 10 minutes. Adjust seasoning.
  • Assemble the burritos by spreading a bit of beans on each Northgate flour tortilla, add the cochinita pibil and slices of avocado. Close it like a burrito.
  • Grill the burritos in a high-heat grill pan, cut them in half, and serve with pickled onions, cilantro, and habanero sauce.
