Ingredients: 1/2 cups white vinegar; 1/4 cups lime juice; 1 red onion, sliced; 1 teaspoon dried oregano; 3 Habanero chiles, sliced, deveined and seedless; 1/4 cups bacon, chopped; 1 cup refried beans; 1 tablespoon ground chipotle chile; salt and pepper; 1/4 teaspoons cumin; 1 tablespoon vegetable oil; 1 cup cochinita pibil; 3 tablespoons orange juice, sour; 4 Northgate flour tortillas; 1 avocado, in slices

For the pickled onions, in a bowl mix the vinegar with the lemon juice, onion, oregano, habanero chili, salt and pepper to taste. Marinate for about 1 hour or until the onions change color. In a medium skillet, cook the bacon until golden, add the beans, chipotle, and cook for 5 minutes, season with salt, pepper, and cumin to taste. Set aside.
