Glazed Pork Belly

  • 2 kilos pork belly, USMEF®
  • salt

  • 1/2 cups butter, melted for the glaze
  • 1 cup apricot jam
  • 1 tablespoon rice vinegar, for the glaze
  • 1 tablespoon ketchup, for the glaze

  • Preheat the oven to 200 °C.
  • Make small cuts on the surface of the USMEF® quality pork belly in the shape of diamonds of equal size. Season with salt and pepper. Place on a tray and bake for 90 minutes at 200 °C. Remove from the oven and set aside.
  • In a bowl, mix the melted butter with apricot jam, rice vinegar, and ketchup. Set aside.
  • Cut the pork belly into small slices, serve with yellow corn.
