Homemade Tacos al Pastor

One day, I craved some tacos al pastor and thought to make my own marinade, and it seems I succeeded, which is why I want to share it. Prepare it; you won't regret it.

  • 2 guajillo chiles
  • 1/4 pineapples, chopped
  • 1/2 onions
  • 1 bunch parsley , washed and disinfected
  • 350 grams pork leg
  • 1 cup cola
  • 2 red beefsteak tomatoes
  • 1 kilo corn tortillas
  • 1 orange
  • 1 teaspoon apple cider vinegar
  • 1 1/2 teaspoons balsamic vinegar
  • 1 tablespoon achiote
  • salt , to taste
  • Oléico® safflower oil
  • pepper, to taste

  • In a pot, boil water and add the guajillo. In the blender, place the guajillo, the cooking water from the guajillo, tomato, pepper, garlic, and salt to taste. Blend until everything is well combined; the sauce should be slightly thick.
  • Add the orange juice, Oléico® oil, and achiote to the blender.
  • In a pot, add the blended ingredients and season. Gradually add the cola soda and then add the apple cider vinegar and balsamic vinegar.
  • Heat a grill and place the pork pineapple cut thinly into slices. Brush with Oléico® oil and orange juice. The meat is also brushed with the same sauce and cooked in the pan or grill.
  • For the sauce, place in the blender 1/4 tomato, morita chili, árbol chili, tomato, serrano chili, garlic, and onion.
  • Cut the meat and pineapple finely, serve along with the sauce.
