  • 12 pasilla chiles, clean
  • 6 tomatoes
  • 1/2 white onions
  • 3 cloves garlic
  • 12 allspice berries
  • 9 cloves
  • 8 bay leaves
  • 1 cinnamon stick
  • 2 tablespoons dried thyme
  • 2 cups white vinegar
  • 3 cups orange juice
  • salt

  • corn tortillas
  • pickled onions with Habanero chile
  • salsa

  • Heat a cast-iron skillet on the grill and pour in oil. Add the chiles, tomatoes, onion, and garlic cloves and cook until they are slightly charred. Incorporate the allspice, cloves, bay leaves, cinnamon stick, and thyme and cook for 3 more minutes. Add the vinegar, orange juice, and salt and cook for another 5 minutes. Blend until you obtain a sauce-like consistency and set aside.
  • Brush the pork with the marinade. Place the meat on the grill so that the fire does not hit it directly. Cook for 4 hours, brushing with the marinade every 40 minutes.
  • Once the pork is ready, shred it and serve in tacos. Garnish with pickled onions and your favorite sauce.
