Marinated Pork with Pineapple

  • 1/2 teaspoons cumin, for the marinade
  • 1/2 teaspoons cilantro seeds, for the marinade
  • 1/4 teaspoons whole pepper, for the marinade
  • 1/2 teaspoons oregano, for the marinade
  • salt, for the marinade
  • 2 cups cilantro, for the marinade
  • lard
  • 1 kilo pork chump, in large cubes

  • 1 pineapple, cored, sliced into half-moons
  • 3 tablespoons sugar
  • vegetable oil, in spray

  • Cook the tomatoes, onion, garlic, ancho chili, and guajillo chili in a pot with boiling water for about 3 minutes. Remove and set aside.
  • Blend the cooked ingredients with cumin, coriander seeds, pepper, oregano, salt, and cilantro for 3 minutes or until a smooth mixture is obtained. Set aside.
  • Heat a skillet over high heat, add lard and pork pulp, and season with salt. Seal on all sides, and when golden, pour in the marinade. Cook over low heat for about 30 minutes.
  • In a bowl, mix the pineapple with the sugar.
  • Heat a skillet or grill, spray a little vegetable oil, and grill the pineapples on both sides.
  • Serve the marinated pork with pineapple on a shallow plate, arrange the grilled pineapples, and sprinkle with green onion.
