Meat with Chipotle

Pork meat with chipotle and vegetables, for 4 people. This recipe is very similar to discada but with a few less ingredients; I hope you like it.

  • 250 grams pork, leg
  • 3 potatoes, medium
  • 4 pickled Jalapeño chiles
  • 1 onion
  • 2 tomatillos
  • 1 can chipotle chile, 200 grams
  • salt
  • 4 tablespoons olive oil
  • 1 clove garlic
  • 1 cup water
  • pepper

  • Wash and chop the vegetables (onion, tomato, peppers, and potatoes) and cut the meat into medium cubes.
  • Heat the pan and oil for 3 minutes and brown the meat; when the meat is nicely browned, add the potatoes until they are soft.
  • When the potatoes are soft, add the vegetables.
  • When the onion is translucent, add the can of chipotle peppers and one cup of water.
  • Season to taste (garlic, salt, and pepper) and let it boil for 3 minutes.
