Christmas leg

Delicious stuffed leg perfect for Christmas dinner. It is an exceptionally flavorful recipe, as well as being easy to prepare, perfect for Christmas celebrations.

  • 2 kilos leg, in pieces
  • 2 cups dried cranberries
  • 2 cups walnuts, in halves
  • 2 cups almonds, sliced
  • 2 cups prunes
  • 1 green bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 onion, in julienne
  • 1/2 kilos chorizo, fried
  • 1 head garlic, chopped
  • 2 liters white wine
  • 2 liters orange juice
  • 100 grams butter
  • salt, to taste
  • pepper, to taste

  • The leg is stuffed with cranberries, onion, prunes, peppers, chorizo, walnuts, and almonds.
  • Season the leg with salt and pepper
  • Marinate with half of the juice and half of the wine overnight.
  • Preheat the oven to 300° C.
  • Baste the leg with the remaining liquids.
  • Cover with aluminum foil.
  • Bake for 2 hours at 300° C, basting the leg with the juice approximately every 30 minutes.
  • Remove the leg and transfer to another dish.
  • In the baking dish, add the butter and place directly over medium heat.
  • Wait for the liquid to reduce and become glossy.
  • Once the leg is cold, slice it and drizzle with the reduction of the liquids.
