Cochinita Pibil Cocina Mestiza®

We present to you a classic dish from traditional Yucatecan cuisine, from southern Mexico. Cochinita is pork in a delicious pibil marinade sauce from Cocina Mestiza®. It's a recipe you'll love.

  • 1 jar Cocina Mestiza® pibil dressing
  • 1 cup orange juice
  • 2 limes, (its juice)
  • 1 kilo pork leg
  • 1 tablespoon vegetable oil
  • salt, to taste
  • pepper, to taste
  • 8 limes, (for the habanero chili sauce)
  • 1/4 red onions, (for the habanero chili sauce)
  • salt, to taste (for the habanero chili sauce)

  • In a large Ziplock bag, mix the Cocina Mestiza pibil marinade and the orange and lemon juices. Add the meat and salt and pepper to taste. Close the bag and shake well to ensure everything is evenly mixed. Let marinate for 1 to 6 hours.
  • In the pressure cooker, heat 2 tablespoons of oil and pour in the contents of the bag. Close it, and when the pressure cooker starts to release steam, let the meat cook for 25 minutes.
  • While the meat is cooking, chop and mix the ingredients for the habanero chili sauce.
  • Open the pot and shred the meat finely. Mix with the cooking sauce.
  • Serve with Habanero Chili Sauce and fried plantains and white rice.
