Glazed Leg with Tamarind

  • 1 pork leg ham, (2.5 kg)
  • 30 slices Fud® smoked bacon
  • 2 tablespoons butter
  • 1 cup tamarind concentrate
  • 1 cup soy sauce
  • 1 cup raw sugar
  • 1 cup ground chipotle chile
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon oregano
  • 1 sprig thyme
  • mashed potatoes, for garnish
  • parsley, for decoration

  • Preheat the oven to 190 °C.
  • Cover the Fud® Holiday Leg with slices of Fud® smoked bacon, secure with toothpicks, place on a baking tray, and bake for 20 minutes, or until the bacon is golden.
  • For the glaze, in a small pot over medium heat, melt the butter, add the tamarind concentrate, soy sauce, brown sugar, ground chipotle, garlic powder, onion powder, oregano, and thyme; cook until it has a semi-thick consistency. Let it cool and set aside.
  • Cut a slice of the leg and serve with the tamarind sauce; accompany with mashed potatoes.
