Marinated Pork Leg Amara

  • 1 pork leg
  • 6 dried ancho chili peppers
  • 3 pasilla chiles
  • 3 cloves garlic
  • 1/2 onions, roasted
  • 6 cloves
  • 250 milliliters pineapple vinegar
  • 3 tablespoons honey
  • 4 pineapples, in syrup
  • 4 carrots, for baking
  • 4 onions, for baking
  • 250 milliliters white wine
  • 500 grams puree, of yellow sweet potato
  • 1 Romaine lettuce
  • 10 cherry tomatoes
  • 100 grams walnuts, pecan
  • 50 grams onion, in vinegar
  • salt and pepper, to taste

  • Clean the Amara pork leg and tie it with the help of a kitchen twine.
  • With a sharp knife, make one-centimeter deep perforations in a diamond shape all over the surface of the fattier part.
  • Roast the chiles, clean them, remove the seeds, and soak them in hot water for 10 minutes.
  • Roast the garlic and onion wrapped in aluminum foil on a griddle.
  • Blend the chiles, garlic, onion, cloves, vinegar, honey, salt, and pepper in a blender.
  • Spread the marinade over the leg and let it rest for two hours.
  • Place the chopped carrots, chopped onions, and white wine at the bottom of the desired mold and add the leg. Decorate with pineapple in syrup.
  • Bake at 160°C. You should calculate 1 hour per kilo and baste the leg frequently. After the baking time, let it rest before slicing.
  • Decorate a platter with lettuce, walnuts, green onions, and tomatoes.
  • Place the Amara pork leg on the decoration and serve.
