Pork Adobo Casserole

  • 1 kilo pork ribs
  • salt
  • pepper
  • 6 guajillo chiles, for the marinade
  • 1 garlic, for the marinade
  • 1/4 onions, for the marinade
  • 1 teaspoon cumin, for the marinade
  • 1 teaspoon oregano, for the marinade
  • 1/4 cups white vinegar, for the marinade
  • 1 1/2 cups chicken broth, for the marinade
  • 1 bay leaf, for the marinade

  • Wipe a paper towel with a little oil over a Royal Prestige® Novel Paella Pan over medium heat, preheat for 30 seconds, but be careful not to overheat the utensils. Sauté the pork until slightly golden and season with salt and pepper.
  • Heat the Royal Prestige Simple Griddle and roast the guajillo chili, garlic, and onion. Remove from heat and set aside.
  • Add the roasted ingredients, cumin, oregano, white vinegar, chicken broth, and bay leaf into a Royal Prestige® Power Blender. Blend for 3 minutes or until you achieve a smooth and creamy sauce.
  • Pour the sauce over the meat, season with salt and pepper. Cover and cook on low heat for 20 minutes.
  • Serve the pork adobo casserole accompanied by tortillas and white rice.
