Pork Chop in Red Fruit and Habanero Glaze

  • 3 tablespoons butter
  • 1 cup onion, chopped
  • 1 tablespoon garlic, chopped
  • 1 cup canned tomatoes
  • 1 cup mixed berries, frozen
  • 1 cup Domino® raw sugar
  • 2 tablespoons Worcestershire sauce
  • 3 tablespoons apple cider vinegar
  • 1 cup apple juice
  • 1 cup apple purée
  • 2 leaves bay
  • 1/2 Habanero chiles
  • salt

  • 5 pork chops
  • 1 cup butter
  • 1 tablespoon vegetable oil
  • 1 teaspoon thyme, ground
  • salt

  • blackberries
  • raspberries
  • chervil, for decoration
  • mashed potatoes, to accompany

  • Heat a pot over medium heat and add the butter, sauté the onion and garlic for 2 minutes, add the tomato and red fruits, add the Domino® Mascabado Sugar and cook for 5 minutes to caramelize. Then, add the blended sauce, apple cider vinegar, apple juice, apple puree, habanero pepper, and bay leaf, mix and season with salt and pepper. Cook for 5 more minutes to integrate the flavors; remove from heat and cool.
  • Blend the above until you obtain a sauce and set aside. You can remove the habanero pepper if desired.
  • Season the chops with salt, pepper, and thyme. In a medium skillet, heat the butter and add a tablespoon of oil, cook the chops on both sides. Pour the glaze and cook for 5 more minutes, add the blackberries and raspberries, remove from heat.
  • Serve the chops accompanied by mashed potatoes.
