Marinated Chops

  • 2 tablespoons Goya® Extra Virgin Olive Oil
  • 2 cloves garlic
  • 1/4 onions
  • 3 tomatoes, cut in halves
  • 1/4 cinnamon
  • 2 cups chicken broth
  • 1 envelope Goya® coriander and achiote seasoning
  • 1/4 cups orange juice
  • 6 guajillo chiles, rehydrated, seedless and veinless
  • 2 morita chiles, rehydrated, seedless and veinless
  • 2 tablespoons Goya® Extra Virgin Olive Oil
  • 1 cup carrot, peeled and cut into thick slices
  • 1 cup potato wedges
  • 4 pork chops, thick cut
  • salt
  • ground black pepper
  • white rice

  • Sear the garlic, onion, tomato, and cinnamon over high heat with a little Goya® Extra Virgin Olive Oil for 5 minutes.
  • Blend the chicken broth with Goya® cilantro and achiote seasoning, the orange juice, the roasted ingredients, the guajillo chiles, and the morita chiles until you obtain a homogeneous mixture.
  • Place the Goya® Extra Virgin Olive Oil with the carrots and potatoes in a skillet, season with salt and pepper, and cook for 5 minutes. Add the pork chops, season with salt and pepper, and cook for 5 more minutes.
  • Flip the chops, pour the marinade, and cook for another 20 minutes or until all the ingredients are ready.
  • Serve the marinated chops and accompany with white rice.
