Mexican-Style Chops

These chops are an economical dish with an exquisite, healthy, and easily obtainable ingredient, Extra Virgin Olive Oil from Europe®. This recipe is a combination of smoked meat with the freshness of vegetables and the Mediterranean touch of European Olive Oils®. They cook quickly and can be made any day of the week, especially for lunch or dinner.

  • 2 cups onion, sliced 2 cups onion, sliced

  • 2 cups tomato, in julienne 2 cups tomato, in julienne
  • 1/4 cups tomato purée

Low
  • Heat a pan over high heat and pour in Extra Virgin Olive Oil from Europe®. Add the chops and sear them on both sides until well browned. Set aside.
  • In the same pan, pour a little more Extra Virgin Olive Oil from Europe®, add the sliced onion and chili, and cook for 3 minutes or until slightly golden. Add the tomatoes and cook until they soften slightly. Incorporate the tomato puree and cook for 3 more minutes.
  • When the liquid has evaporated by half and a slightly thick sauce has formed, return the chops to the pan and heat for a few minutes to blend the flavors.
  • Serve the chops with the Mexican-style sofrito made with Extra Virgin Olive Oil from Europe® and sprinkle with cilantro and a splash of Extra Virgin Olive Oil from Europe®. Accompany with tortillas and Enjoy Life!®
