2.75 kilos pork, in cubes
1/4 cups vegetable oil
2 onions, large
6 cloves garlic, chopped
1 teaspoon sea salt
ground pepper
1 tablespoon ground cumin
4.25 liters chicken broth
8 Poblano chiles, fresh, seedless, and chopped
4 Jalapeño chiles, fresh, seedless, and chopped
2 bell pepper, seedless and chopped
1.35 kilos tomatillo, fresh, peeled
1 bunch fresh cilantro, chopped

In a large pot over high heat, sear the meat in vegetable oil until it turns a golden brown color.
Remove the meat from the pot and leave 2 tablespoons of oil in it.
Add the onion and garlic, season with salt and pepper, and cook until the onion is translucent.
Add the cumin and then the chicken broth.
Finally, return the meat to the pot.
Simmer for 30 minutes.
Add the poblano chiles, jalapeños, and bell peppers.
Blend the tomatoes and cilantro and pour over the stew.
Cook on low heat for an additional 30 to 45 minutes.
