  • 2.75 kilos pork, in cubes
  • 1/4 cups vegetable oil
  • 2 onions, large
  • 6 cloves garlic, chopped
  • 1 teaspoon sea ​​salt
  • ground pepper
  • 1 tablespoon ground cumin
  • 4.25 liters chicken broth
  • 8 Poblano chiles, fresh, seedless, and chopped
  • 4 Jalapeño chiles, fresh, seedless, and chopped
  • 2 bell pepper, seedless and chopped
  • 1.35 kilos tomatillo, fresh, peeled
  • 1 bunch fresh cilantro, chopped

  • In a large pot over high heat, sear the meat in vegetable oil until it turns a golden brown color.
  • Remove the meat from the pot and leave 2 tablespoons of oil in it.
  • Add the onion and garlic, season with salt and pepper, and cook until the onion is translucent.
  • Add the cumin and then the chicken broth.
  • Finally, return the meat to the pot.
  • Simmer for 30 minutes.
  • Add the poblano chiles, jalapeños, and bell peppers.
  • Blend the tomatoes and cilantro and pour over the stew.
  • Cook on low heat for an additional 30 to 45 minutes.
