Pork Knuckle in Chipotle BBQ

  • 1 kilo pork, knuckle in medallions
  • 1 red onion, diced

  • In a pot, cook the knuckle with salt, garlic, and onion over medium heat for 20 minutes with the necessary water.
  • In a saucepan, sauté the onion, garlic, chopped dry chipotle, chopped tomatoes, vinegar, Worcestershire sauce, sugar, pepper, and season with salt. Let it cook for five minutes. Add the sprig of rosemary, let it cool a bit, grind, and strain. Add one cup of Hunt's ® Chipotle BBQ Sauce, mix very well and set aside.
  • Fry the previously cooked pork a little and start spreading the creamy sauce on each side over low heat for 5 minutes; until it takes on a beautiful golden color. Spread the sauce on each side.
  • Clean the avocados, mix with the finely chopped onion and cilantro. Add salt, lime, and mash.
  • Prepare the previously refried beans and tortilla chips.
  • Serve a portion of guacamole, a portion of refried beans, a tablespoon of Hunt's ® Chipotle BBQ Sauce, and on top of it, the pork medallion, and enjoy your meal.
