Ingredients: 1 kilo pork, knuckle in medallions; 1 red onion, diced; 1 garlic, one medium head, clean; 5 tomatoes; 1/4 cups pineapple vinegar; 1/4 cups Worcestershire sauce; 2 tablespoons brown sugar; 5 allspice berries; vegetable oil, for frying; 1 sprig rosemary; 1 chipotle chile; 1 tub Hunt's ® BBQ chipotle sauce; 1/2 kilos avocado; 1/2 onions, finely chopped; 2 sprigs fresh cilantro, finely chopped; 1/2 limes; 1 cup pinto beans, refried; tortilla chips, for serving

In a pot, cook the knuckle with salt, garlic, and onion over medium heat for 20 minutes with the necessary water. In a saucepan, sauté the onion, garlic, chopped dry chipotle, chopped tomatoes, vinegar, Worcestershire sauce, sugar, pepper, and season with salt. Let it cook for five minutes. Add the sprig of rosemary, let it cool a bit, grind, and strain. Add one cup of Hunt's ® Chipotle BBQ Sauce, mix very well and set aside.
