  • Preheat the oven to 200° C.
  • For the marinade: mix in a bowl the mustard, finely chopped garlic, olive oil, salt, pepper, honey, and rosemary, mixing thoroughly.
  • Score the pork loin so the marinade can penetrate and season with salt and pepper. Marinade with the mixture and cover with aluminum foil.
  • Bake at 200° C for approximately 60 minutes; after this time, check the cooking, remove the aluminum foil, and return the loin to the oven to brown and finish cooking.
