Pork Loin in Creamy Pineapple Sauce

  • 3/4 jars McCormick Mayonnaise with Lemon Juice, 507 g
  • 1/4 cups butter, in cubes, for the sauce
  • 1 cup onion, cut into large cubes, for the sauce
  • 2 cloves garlic, without skin, for the sauce
  • 1 sprig celery, chopped, for the sauce
  • 2 cups canned pineapple, drained, in medium triangles, for the sauce
  • 1 tablespoon chili flake, for the sauce
  • 2 tablespoons parsley, finely chopped for the sauce
  • 1/4 cups milk, for the sauce
  • 1/2 cups white wine, for the sauce
  • 1/2 cups almonds, chopped, for the crust
  • 1/2 cups walnuts, chopped, for the crust
  • 1/4 cups candied sesame seeds, for the crust
  • 1/4 cups peanuts, clean, without salt
  • 1/2 cups dried pineapple, chopped, for the crust
  • 1 teaspoon garlic powder, for the crust
  • 1 teaspoon chives, dry, for the crust
  • 2 kilos pork loin, whole, clean
  • 1/4 cups honey
  • 1/4 cups butter, in cubes

  • Prepare the sauce: Melt the butter in a pan over medium-low heat and cook the onion, garlic, and celery until they become glossy. Add the canned pineapple, chili flakes, and parsley, and cook for 5 minutes over low heat or until the pineapple is lightly browned. Remove from heat.
  • Blend the previous mixture along with the milk, white wine, and McCormick® Mayonnaise with lemon juice, salt, and pepper until fully combined and a homogeneous consistency is obtained. Set aside.
  • For the crust: In a bowl, mix the almonds with the walnuts, candied sesame, peanuts, dehydrated pineapple, garlic powder, and dried chives. Mix until combined and set aside.
  • Preheat the oven to 200 °C.
  • Brush the pork loin with honey over the entire surface and cover with the seed mixture, pressing with your clean hands to ensure the seeds adhere perfectly, and season with salt and pepper.
  • Melt the butter in a hot pan over medium-low heat and sear the meat for 15 minutes. Remove from heat.
  • Place the loin in a baking dish, pour the mayonnaise sauce over it, cover with aluminum foil, and bake at 200 °C for 45 minutes.
  • Slice the pork loin, drizzle with the creamy pineapple sauce, and serve with slices of bread.
