Pork Loin in Mango Sauce

Super easy to prepare, delicious for this Christmas. Something new and out of the ordinary. It’s ideal for lovers of sweet and savory. The truth is I loved it, and I hope you do too, good luck.

  • 190 grams Philadelphia® cream cheese
  • 3 cups wine, rosé
  • 1 cup leek
  • 3 cups mango pulp
  • 3 tablespoons vinegar
  • 3 tablespoons sugar
  • 1 tablespoon fresh ginger
  • 190 grams Philadelphia® cream cheese
  • 1 mango, in slices
  • 4 tablespoons vegetable oil
  • 600 grams pork loin, cut into sheets
  • salt, to taste
  • pepper, to taste

  • Blend the sauce ingredients: 190g of cream cheese, 3 cups of rosé wine, 1 cup of leek, 3 cups of mango pulp, 3 tablespoons of vinegar, 3 tablespoons of sugar, 1 tablespoon of fresh ginger, salt and white pepper to taste, season and set aside.
  • Season the loin with salt and pepper, spread cream cheese and mango over the entire surface of the meat, roll it up, and secure with string.
  • Heat the oil in a pan and sear the loin on all sides until browned.
  • Place the loin in a baking dish, pour the sauce over it, and bake at 180°C for 45 minutes. Check for doneness.
  • Slice the loin into medallions.
