Pork Loin in Mango Sauce with Habanero Chile Extra Special

Delicious pork loin in mango sauce with extra special habanero chili that will help you pamper the whole family. A light sweet and spicy flavor at the same time.

  • 1 jar Extra Special mango sauce with Habanero
  • 3 star anise pods
  • 3/4 teaspoons black peppercorn
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons sugar
  • 3 teaspoons olive oil
  • 1 kilo pork shank

  • Grind the black pepper with the star anise, coarse salt, and sugar in a mortar or coffee grinder. Transfer the mixture to a small bowl and add olive oil, mix, and set aside.
  • Spread the paste evenly on the pork loin, place the meat in a sealed plastic bag for at least 4 hours or preferably overnight in the refrigerator.
  • Sear the pork in a large, heavy skillet with butter and olive oil until golden brown.
  • Place the meat in a baking dish and put it in the preheated oven at 220°C for 40 minutes.
  • Remove the meat and cover it with aluminum foil, letting it rest for at least 7 minutes. Cut into slices of approximately 1 cm.
