Grind the black pepper with the star anise, coarse salt, and sugar in a mortar or coffee grinder. Transfer the mixture to a small bowl and add olive oil, mix, and set aside.
Spread the paste evenly on the pork loin, place the meat in a sealed plastic bag for at least 4 hours or preferably overnight in the refrigerator.
Sear the pork in a large, heavy skillet with butter and olive oil until golden brown.
Place the meat in a baking dish and put it in the preheated oven at 220°C for 40 minutes.
Remove the meat and cover it with aluminum foil, letting it rest for at least 7 minutes. Cut into slices of approximately 1 cm.
