Pork Loin in Pineapple Sauce

  • 1/2 kilos canned pineapple
  • 150 milliliters dark rum
  • 50 grams mustard
  • pepper, to taste

  • The first thing we will do is tie the pork loin to keep its oval shape. Next, we need to marinate it with mustard and season it with a little salt and pepper.
  • To prepare the pineapple sauce, we need to blend the pineapple along with its syrup and the rum. The resulting mixture will be placed in a pan over low heat until it forms a syrup. Once the mixture thickens, we will brush the sauce onto the loin, making sure to cover it completely.
  • Once we have the pork loin covered with the sauce, we need to place it in a baking dish and then put it in a preheated oven at 150 degrees Celsius. While it is baking, we recommend brushing the loin with the sauce from time to time so that it absorbs and develops a better flavor.
