  • 1 pork loin, of 1.5 kg, cleaned
  • 1 tablespoon garlic, mashed
  • 4 tablespoons fresh thyme, finely chopped
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons sage, finely chopped
  • 3 tablespoons fresh chives, finely chopped
  • 1/4 cups olive oil
  • 3 tablespoons salt
  • 1 tablespoon pepper
  • 1/2 cups white wine
  • 1/2 cups chicken broth
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 3 cups whipping cream
  • 2 baguettes

  • Preheat the oven to 200° C.
  • Mix in a bowl the garlic, thyme, rosemary, sage, chives, olive oil, salt, and pepper.
  • Cover the pork loin with this mixture and let marinate for 30 minutes. Place the loin in a deep baking tray. Add the wine and the broth. Cover with aluminum foil and bake for 1 hour. Check the cooking, remove the loin, and reserve the broth.
  • Melt the butter in a large deep skillet over medium heat, add the flour and mix well. Incorporate the cooking broth, the cream, and cook for 10 minutes over low heat.
  • Cut the pork loin into thin slices. Place it in the sauce and cook for 3 more minutes.
