Pork Loin Stuffed with Apple

  • 1 1/4 kilos pork loin
  • 3 red apples
  • 1 cup prunes, seedless
  • 1 cup apple cider
  • 1 cup chicken broth
  • 1 tablespoon cornstarch
  • 2 green apples
  • 1 tablespoon cinnamon powder
  • 1 bunch parsley
  • sugar, to taste
  • vegetable oil, necessary amount
  • salt, to taste
  • pepper, to taste

  • Dice the red apples into small cubes and place them in a bowl. Once chopped, place them in a skillet with a little oil. Let them cook for a few minutes.
  • Meanwhile, cut the prunes in half and add them to the skillet with the apples, add salt, ground cinnamon, and pepper to enhance the flavors, mix everything well, and add a little sugar, then chop the parsley and add a little finely chopped. Let it cook.
  • Trim a thin layer from the pork loin, about 1 cm thick, without cutting all the way through, then open and cut to create a pocket without breaking either end.
  • When the filling is at the desired point, transfer it to the pocket of the meat and close it in such a way that the mixture is not visible; use a string to tie it up and place it in a previously greased baking dish, remember to season with salt and pepper. Bake at 200° C for approximately 40 minutes to an hour.
  • For the sauce: Cut the green apples into wedges and add them to the skillet, season with salt and pepper to taste, also add more ground cinnamon and about 4 tablespoons of sugar. Similarly, incorporate the chicken broth and the cornstarch dissolved in the apple cider to thicken it well. Let it come to a boil and set aside.
  • Remove the well-cooked pork loin from the oven, take off the string, slice it, and serve it with the apple sauce.
