  • 3 tablespoons olive oil
  • 1 onion
  • 1/2 cups leek, chopped
  • 2 apples, cubed and peeled
  • 1/2 cups cranberries
  • 8 leaves sage, finely chopped
  • 2 cups croutons
  • 1 egg, beaten
  • 2 tablespoons butter
  • 1/2 cups chicken broth
  • 1 kilo pork loin, flat cut

  • Preheat the oven to 375°F or 190°C.
  • In a large pot, heat the olive oil over medium-high heat. Add the onion, leek, apple, and sage. Cook until everything softens for a few minutes.
  • Remove the mixture from the heat and add the butter, blueberries, croutons, egg, salt, and pepper to taste. Gradually add chicken broth until everything is moist. (Let the stuffing cool.)
  • Cut the pork loin to achieve a large flat piece (alternatively, you can ask your butcher for it this way).
  • On the pork loin, place the stuffing and roll it up gradually until you have a roll. Tie it with kitchen string to prevent the stuffing from spilling out during baking and place it in a baking dish.
  • Cook for 90 minutes (depending on the thickness of the loin, the time may be less) or until a thermometer reads 160°F or 70°C when inserted. Carefully remove the kitchen string and let it rest for 15 minutes before serving.
