  • 600 grams pork loin
  • 1 slice papaya, unripe
  • 3 tablespoons plain yogurt
  • 1 tablespoon ginger, grated
  • 1 tablespoon chili powder
  • 1 tablespoon garlic, grated
  • 1/4 teaspoons turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 2 tablespoons lime juice
  • 1/4 teaspoons red food coloring
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons corn oil

  • Grind the papaya and apply it to the pork loin. Let it marinate for at least 3 hours.
  • Mix the yogurt with the other ingredients and coat the loin with this mixture. Place it in a baking dish.
  • Put it in the oven and let it become tender and golden. Add a bit of hot chicken broth if necessary to prevent it from drying out.
