600 grams pork loin
1 slice papaya, unripe
3 tablespoons plain yogurt
1 tablespoon ginger, grated
1 tablespoon chili powder
1 tablespoon garlic, grated
1/4 teaspoons turmeric
1 teaspoon ground cumin
1 teaspoon salt
2 tablespoons lime juice
1/4 teaspoons red food coloring
1 tablespoon fresh cilantro, chopped
2 tablespoons corn oil

Grind the papaya and apply it to the pork loin. Let it marinate for at least 3 hours.
Mix the yogurt with the other ingredients and coat the loin with this mixture. Place it in a baking dish.
Put it in the oven and let it become tender and golden. Add a bit of hot chicken broth if necessary to prevent it from drying out.
