Pork Loin with Apple Sauce

Prepare this very tender and juicy pork loin for the holiday season, cooking it in an apple sauce with white wine, a touch of honey, and fresh thyme; this sweet sauce is ideal to accompany this delicious loin and the mashed potatoes.

  • 2 kilos pork loin, Tied with hemp string
  • 3 tablespoons vegetable oil
  • 1 pinch Sal Sol® sea salt
  • 1 pinch black pepper, ground
  • 1/4 cups butter
  • 3 cloves garlic, finely chopped
  • 4 Golden Delicious apples, and red, cut into wedges
  • 1 cup apple juice
  • 3 tablespoons honey
  • 1/4 cups white wine

  • Preheat the oven to 220° C.
  • Heat a skillet over medium heat with the oil, sear the tied loin on all sides until browned, season with Sal de Mar Sal Sol® and pepper. Remove and place it on a baking tray.
  • Add the butter to the same skillet, cook the garlic with the apple, pour in the apple juice, honey, white wine, and cook until reduced. Add the thyme and season with Sal de Mar Sal Sol® and pepper to taste.
  • Pour the previous preparation over the loin and coat the entire piece. Bake for 40 minutes. Let the loin rest, slice, portion, and serve with the apples and sauce, enjoy.
