Pork Loin with Coffee Caramel

  • 50 grams fresh oregano
  • 50 grams fresh thyme
  • 3 cloves garlic
  • 200 grams onion
  • 1 kilo pork loin
  • vegetable oil
  • salt, to taste
  • pepper, to taste
  • 200 grams instant coffee
  • 100 grams honey
  • vanilla essence
  • water

  • Blend the thyme, oregano, onion, and garlic.
  • Pour over the loin to marinate it. Let it rest for 30 minutes so the meat absorbs the mixture.
  • Sear the meat in a very hot pan with a small amount of oil.
  • Season both sides with salt and pepper and place the seared loin on a tray to later put it in the oven, set it aside for a moment.
  • Mix the coffee with honey, a splash of vanilla extract, and water.
  • Take the meat to the oven and cook at medium temperature, brushing it regularly with the coffee mixture, until the meat takes on a caramelized color on top and is cooked to perfection.
