Pork Loin with Sweet and Sour Plum Sauce

  • 1 jar salsa, Sweet and Sour Plum Sauce from Mestiza Cooking®
  • 1 kilo pork tenderloin
  • 2 cloves garlic, peeled and squeezed
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons lard
  • 3/4 cups white wine
  • 1 can beef broth, (300 g)
  • 1 bunch fresh thyme
  • 1 cup prunes, boneless

  • Mash the garlic with salt and pepper to form a paste and rub it all over the pork loin. Let it marinate for at least one hour.
  • Preheat the oven to 180°C
  • In a heavy cast-iron pot, melt the lard over medium heat on the stove and brown the pork loin on all sides. Remove the loin, and add the wine, scraping the bottom and sides of the pot to dissolve the browned bits stuck to the pot. Return the loin to the pot and add the can of consommé and the sprig of thyme. Cover and bake for 30 minutes.
  • Add the jar of Mestiza Cooking Sweet and Sour Plum Sauce and the prunes. Cover again and bake for another 30 minutes.
