  • Preheat the oven to 200° C, wash the meat and dry it well with a clean cloth, mash the garlic, pepper, and salt in a mortar, spread this mixture over the meat, and then start filling it by distributing all the capers over the loin. After that, add the boiled egg sliced over the entire loin.
  • Carefully roll the loin ensuring that all the filling stays inside, then tie it with hemp twine as if it were a tamale so that the filling doesn't spill out.
  • For the sauce, soften the chiles with a little hot water and let them rest for a while. Once they are soft, place them in the blender along with all the other ingredients, blend them well, and once blended, adjust the salt.
  • Place the tied pork loin roll in a baking dish or mold according to your roll, pour the blended sauce over it, and once it's well distributed, cover it with a piece of aluminum foil. Put it in the preheated oven, lower the temperature to 180° C, and let it cook for two hours.
  • After the required time, check if it's cooked properly; if so, take it out of the oven and let it cool. Slice it and serve.
