The pork loin is a traditional Mexican recipe that is simple to prepare and very delicious. I always make it when I have an important commitment and want to make a great impression. Give it a try!
Preheat the oven to 200° C, wash the meat and dry it well with a clean cloth, mash the garlic, pepper, and salt in a mortar, spread this mixture over the meat, and then start filling it by distributing all the capers over the loin. After that, add the boiled egg sliced over the entire loin.
Carefully roll the loin ensuring that all the filling stays inside, then tie it with hemp twine as if it were a tamale so that the filling doesn't spill out.
For the sauce, soften the chiles with a little hot water and let them rest for a while. Once they are soft, place them in the blender along with all the other ingredients, blend them well, and once blended, adjust the salt.
Place the tied pork loin roll in a baking dish or mold according to your roll, pour the blended sauce over it, and once it's well distributed, cover it with a piece of aluminum foil. Put it in the preheated oven, lower the temperature to 180° C, and let it cook for two hours.
After the required time, check if it's cooked properly; if so, take it out of the oven and let it cool. Slice it and serve.
