Ingredients: 2 kilos pork loin, boneless and in fillet form; 2 eggs, cooked and sliced; 4 tablespoons capers; 4 cloves garlic; salt, to taste; pepper, to taste; 4 ancho chiles, (for the sauce); 3 chipotle chiles, (for the sauce); 1/2 cups apple cider vinegar, (for the sauce); 1 cup orange juice, (for the sauce); 2 tablespoons Worcestershire sauce; 1 tablespoon Maggi seasoning sauce; 1 cup cola; 1/2 onions, roast

Preheat the oven to 200° C, wash the meat and dry it well with a clean cloth, mash the garlic, pepper, and salt in a mortar, spread this mixture over the meat, and then start filling it by distributing all the capers over the loin. After that, add the boiled egg sliced over the entire loin. Carefully roll the loin ensuring that all the filling stays inside, then tie it with hemp twine as if it were a tamale so that the filling doesn't spill out.
