For the filling, heat the oil with the butter in a deep skillet over medium heat. Add the onion and garlic, cook for a few minutes, and add the walnuts, almonds, peanuts, cashews, and prunes, cooking each ingredient for its proper time.
Add the white wine, salt, and pepper. Cook for another 10 minutes or until the wine reduces. Let it cool slightly.
Stuff the loin with the previous preparation. Tie with hemp string and season with salt and pepper.
Place on a baking tray and cover with aluminum foil, bake for about 40 minutes. Uncover and bake for another 20 minutes to get color. Let it rest for a few minutes before slicing.
