  • 2 kilos pork loin
  • 10 ancho chiles
  • 10 mulato chiles
  • 10 morita chiles
  • 4 tomatoes
  • 1 clove garlic
  • 1/4 onions
  • 2 cloves
  • 2 grams cumin
  • 100 milliliters apple cider vinegar
  • 50 milliliters water
  • 10 grams coarse salt
  • 100 grams bacon, or 50 g sliced
  • 100 grams almonds, peeled
  • 50 grams pecans
  • 100 grams raisins

  • Preheated oven to 190° C
  • To stuff the loin, use a knife to make holes all over the piece of meat and insert bacon, walnuts, almonds, and raisins into each hole. Tie the loin and set aside.
  • Roast the chiles, tomato, and garlic. Pour into a blender and blend with the onion, water, vinegar, and spices.
  • Marinate the loin for 30 minutes with the previous sauce.
  • Cover the loin with aluminum foil and bake for one hour. Once that time has passed, remove the aluminum foil and bake for 20 more minutes or until browned.
  • Remove the string, let it rest for 5 minutes, and slice. Serve drizzled with the sauce.
