  • 1 kilo pork ribs, in pieces
  • 1 kilo nopal, cut into cubes and cooked
  • 2 ancho chiles
  • 3 guajillo chiles
  • 4 árbol chiles, or bird's beak
  • 6 cloves garlic
  • 1 pinch salt
  • 1 pinch pepper
  • 1 1/2 liters water

  • Blend about 5 cloves of garlic in 1 liter of water and heat over medium heat.
  • Add the ribs and let cook until the water evaporates (reserve a little to make the sauce).
  • The next step is to roast the chiles and soak them until they are soft, blend with a little of the cooking water from the meat.
  • Once the meat is cooked and slightly browned, add the blended chiles and add water to cover.
  • Add the already cooked nopales.
  • Season to taste.
