1 kilo pork ribs, in pieces
1 kilo nopal, cut into cubes and cooked
2 ancho chiles
3 guajillo chiles
4 árbol chiles, or bird's beak
6 cloves garlic
1 pinch salt
1 pinch pepper
1 1/2 liters water
Preparation

Blend about 5 cloves of garlic in 1 liter of water and heat over medium heat.
Add the ribs and let cook until the water evaporates (reserve a little to make the sauce).
The next step is to roast the chiles and soak them until they are soft, blend with a little of the cooking water from the meat.
Once the meat is cooked and slightly browned, add the blended chiles and add water to cover.
Add the already cooked nopales.
Season to taste.
