Ingredients: 1 kilo pork ribs, in pieces; 1 kilo nopal, cut into cubes and cooked; 2 ancho chiles; 3 guajillo chiles; 4 árbol chiles, or bird's beak; 6 cloves garlic; 1 pinch salt; 1 pinch pepper; 1 1/2 liters water

Blend about 5 cloves of garlic in 1 liter of water and heat over medium heat. Add the ribs and let cook until the water evaporates (reserve a little to make the sauce).
